Recipe: Coffee Cake (Can Be Made Eggless As Well)

Ingredients:

  • 1½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup yogurt (or 2 eggs for those who prefer egg variant)
  • ½ cup vegetable oil
  • ½ cup brewed coffee
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional)
  • Powdered sugar for dusting

Ingredients:

  • Preheat your oven to 350°F (180°C). Grease Ecopack’s Round Cake mould with a little oil or line it with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and baking soda.
  • In another bowl, whisk together the yogurt (or eggs), vegetable oil, brewed coffee, and vanilla extract until smooth. 
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped nuts, if using.
  • Pour the batter into the prepared cake mould and spread it evenly.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the mould for a few minutes before transferring it to a wire rack to cool completely.
  • Once cooled, dust the cake with powdered sugar before serving.
